A meat-free spin on a Mexican classic. Seasoned egg whites sautéed with mushrooms and onions and topped with all the fixin's -- where's the beef? Who cares.


  • 2 cups
  • 2 tbsp
    taco seasoning or Mexican seasoning
  • 1/2 cup
    chopped onions
  • 1 cup
    chopped mushrooms
  • 2
    taco shells or tortillas
  • optional salt, pepper, garlic powder, hot sauce

    optional toppings: lettuce, cheese, avocado, sour cream, salsa


  • Pre-heat pan with 1 tbsp olive oil. Add onions and cook until translucent. Add chopped mushrooms. Season with garlic powder, salt and pepper. Cook till soft.

  • Mix 2 cups egg whites and taco seasoning in a bowl. Add to pan with onions and mushrooms. Season with salt and pepper to taste. Cook through.

  • Serve in taco shells and top with your favorite taco toppings. Enjoy!
